Making Oven Bread at Home



For pre-ferment :
1 cup warm water
1 cup flour
1 teaspoon instant yeast (Prepare the pre-ferment the night before and leave it at room temperature for 12 hours)
For the second fermentation:
2,5 cups of warm water
1 packet instant yeast
A teaspoon of salt
6-7 cups of flour (A soft dough that does not stick to the hand will be made)
To spread it on :
1 tablespoon of yoghurt
Half tea glass of water
How to Make Bread ?
Make a soft, non-sticky dough by kneading very well with the pre-fermented dough and let it rest for 45 minutes. After 45 minutes, make 8-10 meringues, cover with a clean cloth and rest for 10 minutes.
Shape them and place them on a greaseproof paper laid or floured baking tray intermittently. Rest for 30-45 minutes. Spread the yoghurt and water mixture on it and make a scratch from the top with a razor blade or a sharp knife.
Place a bowl or a small borglass filled with hot water in the corner of a 250′ oven preheated for at least 20 minutes. Bake the bread (my oven cooked in 21 minutes)
I cooked it on the fanless setting, but you can also cook it on the fan setting
